Easter Basket Cake!

Happy Easter from Craft Picnic! Need a new idea for your Easter brunch? How about an easy Easter Basket Cake:

I crafted one last year for our family Easter celebration. It was super easy, using a yellow cake mix and baking it in two 8-inch cake pans. Then stack with some chocolatey frosting in between and sculpt a little around the edges to make into a basket shape. And frost the entire cake with the rest of the chocolate frosting.

For the basket, I used pastel M&Ms for the stripes and green coconut for the grass. To dye green, place the coconut into a plastic baggie, add a few drops of food coloring, knead the bag so the coloring spreads to all the coconut. Spread out on wax paper and let dry.

To craft the handle, cut out long pieces of light cardboard (cereal boxes work great) about one inch wide, and overlap and tape them together to create the length of the basket handle plus 4 to 5 inches extra to insert into the cake.

Wrap the cardboard in aluminum foil, then in a pretty springtime ribbon, securing the ends with tape.

For an added touch, tie a festive bow with the same ribbon at the top.

Finally, fill your basket cake with your favorite Easter treats. I filled mine with a golden chocolate bunny with some Peeps friends and their eggs.
